Vegan dinner or vegan lunch = recurrent problem for the host.

What am i going to prepare???

Yes, because allegedly to the vegan diet rules, we cannot use dairy (cheese and milk), meat, fish nor eggs. And since I have already been into the same situation (what on Earth am i going to make?), I’ll share with you some easy, quick, delicious vegan dinner ideas.

Vegan dinner ideas:

1)Veggie mix. A special taste of Sicily

Among all, i would say this is my favorite one, with it smell and taste of Sicily!

You just need:

  • 1 eggplant
  • 2 zucchini squash
  • 3 potatoes
  • 1 bell pepper
  • few black olives
  • cherry tomatoes
  • breadcrumb
  • Evo Olive oil.

I would suggest to roast the bell pepper, peel it and remove all the seeds in advance. After this operation, cut all the veggies in cubes and place them in an oven tray. Add olives and olive oil. Mix all the veggie cubes WITH YOUR HANDS.

Add some breadcrumb on top and put the tray in the oven (50 minutes – 395 F).

Ready in 9 minutes…even less! 😀 And no explanation needed!

Dinner vegan ideas: Red lentils mini-burger

Whether you opt for burger or mini-burger size, the lentils could be a great “ally” for your vegan dinner.

You just need to boil them – with a carrot – and mix it with breadcrumb. Keep in mind that the breadcrumb helps to reach the right consistency to form the balls.

Oven, fry pan or air fryer?

I just discovered the wonderful world of the air fryer and – i have to be honest – i am using it for every kind of food 😀 . However, the mini-burger in the air fryer come out great and in only 7 minutes! Crunchy outside, soft inside! Awesome!

Roasted eggplant

I simply love them.

Just cut the eggplant in slices and leave them on a roasting pan until they are very well done (just remember to roast both sides); add olive oil, a small piece of garlic and a pinch of salt. That’s it!

And the pasta?

Ahhhhh, a good question for an Italian. If you want to make a vegan pasta you can choose among different kinds: with broccoli, aglio e olio, pomodoro e basilico, zucchini, just to mention some…Moreover, now that we are in autumn, why not try a chickpeas or beans soup?

Anyway: if you are going to have vegan guests, don’t let the anxiety get to you!
