As Italian, lunch for me is veeeery important, much more than breakfast, but days are long – and with a toddler even longer – and I always need quick and easy lunch ideas, especially for me and my husband.

Salads are the best option – healthy, light etc – but i definitely need to vary my lunch menu, thats why i introduced some quick recipes that I am going to share with you.

Chicken salads in Parmesan “basket” crust

Don’t be scared by the title: this salad is one of the easiest i have ever made in my entire life!

You just need few simple ingredients:

  • arugula
  • chicken
  • Parmesan
  • olive oil

First, I usually grilled the chicken in a grill pan and then i cut it in small cubes.

Then i prepare the crust. I have my method, but this video is absolutely easy and clear and it will help a lot!

Season both chicken and arugula together with olive oil, pinch of salt and add some tomatoes.

Remember: mix the salad using your hand! Grandmas used to say salads would have tasted much better!

Farro salad with cherry tomatoes, cashews and olives.

Wash the farro in a colander, under cold water, for about 2 minutes.

Boil the water, add salt and then the farro. It will be cooked in less than 15 minutes. I usually buy the Trader Joe’s one, and it cooks in 12 minutes, as reported on the label.

Now, farro is a cereal you can mix and match with every kind of ingredient: carrots, celery, tomatoes, nuts, pine nuts, olives, cashews, almond, cheese!!! The list is very long, believe me, and it allows you to create a ton of different delicious and healthy recipes!

Smørrebrød

When i was in Denmark, the Smørrebrød was my usual lunch. As i told already in the dedicated post, those Danish sandwiches are super easy to make and require few ingredients: rye bread, butter (or olive oil), salmon…

…And fantasy, of course!

This one in the above picture is a Smørrebrød made with salmon, hass avocado and white Gouda. 5 minutes to prepare it, healthy, delicious and the stomach is absolutely satisfied!
