Lemon cookies: easy recipe!

The art of receiving starts in the kitchen. Unexpected guests, unannounced visits: it’s always good to have something to offer, especially if we are far from aperitif or tea time, and lemon cookies are a perfect idea for those kind of occasions.

I have to say those delicious cookies are becoming a real constant presence in my kitchen and even more since i bought a lovely cupcake shaped cookie jar!

Furthermore, they are awesome treats to present and serve on our tea table (read the post if you haven’t done it yet)…Just to feel ourselves a little bit like Lady Violet in Downton Abbey.

Lemon cookies: how to make them!

Soften the butter – you can use the microwave if in hurry – and add it to the flour, the egg, the yolk, the sugar and the lemon peel.

Of course remember always to wash the lemon before!

Knead all the ingredients until the dough will be smooth and not sticky. At this point, it would be good to leave the dough for 30 minutes before cutting it, but since i live with my two cookie monsters, i never have this privilege 🙂

SO…Roll out the dough with a rolling pin and cut your lemon cookies using your favorite cookie cutters. I did not have the cutters, so i just used a small coffee mug and it worked perfect; you can cut the dough using a knife also, but for sure, the cutters are easier and faster.

Place in the oven at 365F for 9/10 minutes. Remember that, once you pull out the tray from the oven, the cookies will keep cooking by themselves.

Let them cool a little and then garnish with powdered sugar!
